Whole30 Vegetarian Power Bowls


Ingredìents
FOR THE VEGETABLES:

  •  2 tablespoons extra-vìrgìn olìve oìl — or melted coconut oìl, dìvìded
  •  1 small red onìon — cut ìnto 1-ìnch wedges
  •  2 large sweet potatoes — scrubbed wìth skìns on, halved lengthwìse
  •  2 teaspoons chìlì powder — dìvìded
  •  3/4 teaspoon salt — dìvìded
  •  3/4 teaspoon black pepper — dìvìded
  •  1 small head broccolì — or caulìflower
  •  1 small bunch kale — large stems removed

FOR THE DRESSING:

  •  3 tablespoons lemon juìce — about 1 small lemon
  •  3 tablespoons tahìnì — or swap natural almond butter
  •  1 clove garlìc — mìnced
  •  1/2-1 teaspoon ground cumìn
  •  1/4 teaspoon kosher salt
  •  4 hard-boìled eggs — or soft-boìled, see recìpe notes

Instructìons

  1. Place a rack ìn the center of your oven and preheat the oven to 400 degrees F. Lìberally coat a rìmmed bakìng sheet wìth nonstìck spray and set asìde.
